We cook food under vacuum and in special packs. In this way we can use lower temperatures than the more "traditional" techniques, which essentially means greater "respect" for the raw materials. The result is an exceptionally tender product, because by using low cooking temperatures we limit water loss in the raw materials. This technique also avoids losing scents and aromas into the air, which instead remain inside the pack.
Vitamins and mineral salts, being sensitive to high temperatures, are better preserved when using low cooking temperatures. Again, vacuum cooking simultaneously allows us to pasteurise the product, increasing shelf life in the total absence of preservatives.
